Can anyone point me to the commands for enabling inkOS and disabling MuditaOS? I can’t seem to find them.

You don’t have to disable Mudita Launcher to enable inkOS since v1.4.0 of MuditaOS K.
Simply install inkOS and set it as a default launcher and it will stick.

Oh thank you! Do I still need the ADB command for setting inkOS as the default? or is there another way to do it?

No need. When you install inkOS during onboarding it will show an option to Set as default Launcher, you can do it there. No need for ADB commands anymore.
